Brown sugar shortbread: Relax and have a good time

 You don't need a lot of ingredients to make delicious things, actually the simplest things that you have in the kitchen are enough.


Like this time, you can make this cookie with basic 3 ingredients "butter, sugar and flour", and I think that most of you have them in the kitchen ^^.
The brown sugar, adds delicious caramel hint to the cookie, but if you don't have it, don't worry, granulated sugar is fine. If you happen to have vanilla extract, just use it or skip if you don't want to buy. You can see that sometime baking is so forgiving, do it the way you like and want and be happy with it, that's what I want to tell you. You have the right to be happy in your space, your kitchen and with your sweets, just relax and have a good time with what you do. 
Serve this cookie with a cup of coffee is want I like, but it goes well with tea or milk too. As it made from very basic ingredient the smell and taste of butter and brown sugar (or vanilla if using), don't offend anything.



 Brown sugar shortbread 
Makes 12 pieces


110g .................................. Salted butter, soft
55g .................................... Light brown sugar (half brown sugar, half granulated sugar, or just granulated sugar )
1/2tsp ................................ Vanilla extract (optional)
160g .................................. Plain flour 



Preheat an oven to 165C.
Line 18x18 cm pan with baking paper.


 Beat the butter until smooth, add the sugar and beat until combine.


 Pour the vanilla extract into the bowl and beat until combine.


 Pour the flour into the bowl, stir to combine.


 Don't worry if they are not smooth ^^.


 Pour into the prepared pan, and press to smooth the top.


Score and prick the dough.
Bake for 25-30 minutes.

Cut into pieces immediately.
Sprinkle the top with sugar while hot.
