Parmesan Fried chicken drumettes with salt and pepper biscuits

As I told you, I love fried food ^^. Most of people can't say no to it too, hehe.

There's a time when fast food chain (KFC) had the biscuit in their shop too and I love it so much, eating the biscuits with fried chicken and mash potato was one of my life pleasure, hehe. But now, the shop stopped selling it, so if you want to have a delicious biscuit all you have to do is making it by yourself.
Today we will turn back the clock, ^^ making fried chicken and biscuit at home. But it's not a simple fried chicken, it's Parmesan Fried chicken. Parmesan add delicious taste to the fried chicken, because it is full of umami (richness and fullness taste). You can marinate it for 1 hour or up to 4 hours if you have more time (the longer the better). Deep frying is not hard, using saucepan is recommended because you need the oil to cover all the chicken piece.  
Serve hot fried chicken drumette with warm biscuits (and if you like a bowl of salad), eating with the one you love, I think it's the best idea for serving this delicious dish. ^^ *The chicken drumette is the chicken wing without tip, it's easier to buy it than cut it by yourself. 


 Parmesan fried chicken drumettes
Serves 4-6


1 kg ................................. Chicken wings, without tips (Drumettes)

Marinade
- 15g .................................. Grated parmesan cheese
- 1tsp ................................. Grounded dried paprika
- 1/2tsp ............................. Grounded dried mustard
- 1/4tsp ............................. Dried oregano
- 2tsp ................................. Salt
- .......................................... Pepper

1/2cup ............................... Milk


Flour mixture

135g ................................ All purpose flour
15g .................................. Grated parmesan cheese
1tsp ................................. Grounded dried paprika
1/2tsp ............................. Grounded dried mustard
1/4tsp ............................. Dried oregano
.......................................... Salt and pepper

.......................................... Oil for frying



Mix the chicken drumettes with the marinade mixture, let the chicken marinate for 1-4 hours.
Pour the milk into the bowl before frying.
Mix the flour mixture together, dredge the chicken drumette in the flour mixture, tapping off excess flour, and place on a plate.
Deep fry the drumettes in hot oil (180°C) for 5-6 minutes or until golden brown.
Drain the chicken pieces on paper towel, serve hot.

Salt and pepper biscuits 
Makes 8-9 pieces


 1cup .............................. Whipping cream
1tbsp ............................. Rice vinegar (or lemon juice)
1tbsp ............................. Baking powder
1tsp ............................... Coarse sea salt
1tsp ............................... Granulated sugar
1/2tsp ........................... Coarsely ground black pepper
270g .............................. All purpose flour
85g ................................ Unsalted butter, chilled and cut into small pieces
....................................... Coarsely ground black pepper and flaky sea salt for sprinkle on top

Preheat the oven to 220°C.

Mix the whipping cream and rice vinegar together, the mixture will be thick.
Line the baking sheet with baking paper.


 Mix the flour, baking powder, salt, pepper and sugar together.
Use your finger to mix the butter into the flour mixture until fully mix, the mixture will look like small bread crumbs.
Remove 2tbsp of whipping cream mixture keep them for brushing the biscuits, and pour the rest into the flour bowl. Mix until some part of the mixture moisten, pour onto the work surface, press and fold the dough until smooth, note that this dough is high in moisture. (If you want higher biscuit follow the trick here.)
Cut with 5.5 cm round cookie cutter (rub the cutter with butter and dip it in the flour before cutting). 
Place on the baking sheet, brush with whipping cream, and sprinkle with salt and pepper.
Bake for 13-15 minutes or until the top is brown .
