Breakfast club, good morning with delicious meal: Egg Benedict

 I always love breakfast, the feeling of eating delicious breakfast brings me comfort, and it's the most important meal of the day ^^.

 Yesterday, I went to Gail's Artisan bakery with my sister, and we bought some breads. I chose English muffin because I always want to make Egg Benedict and delicious English Muffin is a must. The size of it quite big but tell you the truth, it's too delicious that I can eat the whole muffin by myself, haha.
Making Hollandaise sauce is not hard, but not easy too, this is the first time for me, and it's not thick enough ^^", anyway, practice and practice will make it better, right? The key is cooking the yolks over low heat until it thicken but not scramble, I afraid of scrambling it and end up with running sauce, so don't make the same mistake, haha.
For the taste of the sauce, you just want it to be a bit tangy to cut down the richness of the sauce, but don't put too much lemon juice, or you will turn your Hollandaise sauce into Lemon curd instead. I recommend delicious unsalted butter to be used in this recipe, because it will be the main flavor of the sauce, add salt to taste later if you want more, because you can't take it out. 
Because breakfast is important and I think that it's better if it's delicious, hehe, so come and enjoy yummy meal with me.


Egg Benedict
Serves 4


4 ................................. Poached eggs
2 ................................. English muffins 
4 slices ........................ Smoked hams
Hollandaise sauce 
2 ................................. Egg yolks
1/4tsp ......................... Lemon zest
1 tsp ............................. Lemon juice
1 tsp ............................. Water
.................................... A pinch of  Cayenne pepper (optional)
.................................... A pinch of salt
.................................... A pinch of sugar
125g ............................ Unsalted butter, soft

For serving
.................................... Chive, for sprinkle on top of the egg
..................................... Salad
..................................... Freshly ground black pepper.

Boil water in a large saucepan over high heat. Put the yolks in a small bowl with other ingredients except butter, whisk to combine. Put this small bowl in a large sauce pan the water should comes halfway up the side of the bowl. Lower the heat and whisk the egg yolk mixture all the time until the mixture increase by half and the mixture is thick.
Remove the bowl from the water, add the soft butter, bit by bit and whisk until combine actually it will be the same as the mayonnaise. Season with salt and pepper.

To serve:
Split the muffin in half, and toast them (if you like spread a butter over the muffin) then place on a plate.
Place the ham over the muffin pieces, follow by the poached eggs and Hollandaise sauce, sprinkle the chopped chive and freshly grounded black pepper on top.
Serve with salad of your choice.
